Most raw oysters taste much better in fall and winter than they do in summer. All oysters are somewhat weaker and thinner after they have done their best at reproducing. Oysters taste best out of cold water, some people say you could follow the frost line (southern oysters in late winter / early spring, northern oysters in fall), but we prefer the Northern East coast oyster anyways.
There are huge seasonal differences in the flavor of the oyster, like vintages of wine. We eat oysters whole year-round, but our absolute favorite time of the year is in September / October, when the oysters are really “plump and sweet.”

Eat oysters everyday and your immune system will be very happy! The oyster is a beautiful, natural and very nutritious product. In addition to a special flavor, these bivalve shellfish also have a lot to offer in terms of health. Take for example zinc and selenium. Oysters contain more zinc than any other food. A medium-sized oyster provides no less than 55 percent of your daily requirement for zinc and selenium!
