Bangin’ Oysters

Jordan Andino of Tastemade created this recipe, so called because of oysters’ legendary qualities. Whatever your intentions, the creamy, garlicky, golden browned cheesy result of this recipe is a winner.

  • 12 large oysters
  • 2 tablespoons of butter
  • 3 cups of spinach, roughly chopped
  • 1 tablespoon of garlic, minced
  • 1 lemon, juiced
  • ¾ cup of mayonnaise
  • 1 cup of cream cheese
  • ¼ cup of parmesan cheese, grated
  • Salt and freshly ground black pepper


Set your oven to broil. In a large sauté pan, melt the butter, and sauté the spinach with the garlic. Season with salt and pepper. Meanwhile, in a mixing bowl, whisk the lemon and the mayonnaise until they’re well incorporated.

Add the cream cheese and the parmesan cheese to the sautéed spinach, cut the heat on the stove, and allow the residual heat to slow melt down the cheese.

Shuck the oysters and place them on a roasting rack. Add the sautéed spinach and cheese mixture to a separate mixing bowl, and combine thoroughly. Place ½ a tablespoon of the lemon mayonnaise on top of each raw oyster, followed by 1 tablespoon of spinach cream cheese. Place the dressed oysters in the oven, and cook until light golden brown.
