Love Bites (Fried Oysters)

Yvan Lemoine at the Food Network came up with this great recipe that we love. The warmth of the batter and the chipotle with the tang of the uni and pickle and the freshness of the pomegranate seeds, pickle, and lemon make a wonderful harmony around the heart note of our beloved oysters.

Ingredients for 4:

  • 4 small oysters
  • Vegetable or peanut oil, for frying
  • ¼ cup of all-purpose flour
  • 1 cup of buttermilk
  • 1 chipotle chili in adobo (for example, La Marena)
  • ¼ cup of mayonnaise
  • 4 pieces of sea urchin (uni)
  • 2 tablespoons of spicy pickles, diced
  • 2 tablespoons of pomegranate seeds
  • Lemon juice


Open the oysters, drain the fluid, and cut the oysters free from their shells and set aside. Rinse and dry the shells.

Heat some oil in a saucepan to 350 degrees fahrenheit. Toss the oysters in the flour, and remove. Make a batter with buttermilk and the flour. Batter the oysters, and fry them until golden. Take them out of the oil and put them on paper towels to drain.

Make the chipotle mayo by adding mayonnaise to the chipotle a bit at a time, and blending until you have a sauce that’s just a little spicy.

To serve, arrange a little mayo in a clean shell and top with 1 fried oyster, a little uni, a little pickle, then a couple of pomegranate seeds and a drop or two of lemon juice.
