Norwegian Vinaigrette


  • 12 fresh oysters: crisp and saline
  • ½ green apple (finely chopped)
  • ½ finely chopped shallot
  • 8 tbsp apple cider vinegar
  • Fresh grinded black pepper


  • Mix the apple, shallot with the apple cider vinegar
  • Bring to taste with the black pepper
  • Open the oysters and drain a bit of the oyster liquor
  • Put a theespoon of Norwegian Vinaigrette on each oyster
